Great Taste Award Winner 2017
Rich, Intense Mountain Heather Honey from Spain
This award-winning raw heather honey comes from the mountainous Sierra de Guadarrama region north of Madrid, where bees forage on wild heather shrubs growing in acidic mountain soils.
Prize Winner at the Great Taste Awards 2017, judges described it as:
“Heavily aromatic. Treacly, almost fudgy in texture… deep meadowy flavours… rich and balanced with length and persistence.”

Raw Honey – What It Means
Raw honey is extracted from the hive and jarred with minimal processing. It is not highly heated or heavily filtered. Because it is not industrially processed:
-
Colour and texture may vary by batch
-
Flavour reflects seasonal and floral variations
-
Natural pollen remains present
Variation is a natural characteristic of raw honey.
Texture & Crystallisation
Colour: Brown with subtle red hues in light.
Runny State: Heather honey does not typically remain runny for long due to its natural glucose content.
Set State: It develops small to medium crystals relatively quickly after harvesting. Crystallisation is a natural process and does not affect quality.
Serving Suggestions
Heather honey pairs well with:
-
Greek yoghurt
-
Ice cream
-
Toast
-
Glazes for meats
-
Baking recipes
-
Cheese boards
Its depth of flavour adds richness and complexity to both sweet and savoury dishes.
